One Campfire, Four Days, No Repeated Meals: Our Cascading Camping Menu

Thursday, September 17 through Sunday, September 20, 2026

For this camping trip, we wanted to do something different.

Not just plan four days of meals.

Not pack four completely separate grocery lists.

And definitely not eat the same leftovers over and over again.

The goal is to build a cascading camp menu: cook ingredients once, then let those ingredients change jobs as the weekend progresses.

Thursday starts with a big Dutch oven of chili. Friday turns some of that chili into loaded baked potatoes. Our late-summer tomatoes move from chili to breakfast sandwiches to grilled tomatoes to Saturday's pasta sauce. Zucchini stays completely out of the chili and instead becomes grilled vegetables, chocolate zucchini bread, and portable race-day food.

Then Saturday changes everything.

Kellie's kids join us, and Nate is preparing for an Ironman on Sunday. Saturday dinner needs to be familiar, high in carbohydrates, reasonably light, and flexible enough that Nate can keep his plate simple while the rest of us can dress ours up.

Sunday is different again. We'll be moving around supporting Nate on the course, so breakfast and snacks need to travel with us.

This is the plan we're taking to camp, recipes and all.


The Weekend at a Glance

How the Food Cascades

The idea isn't to keep serving leftovers.

It's to keep transforming ingredients.

Fresh Tomatoes

Thursday chili → Friday breakfast melts → Friday loaded potato toppings → Saturday grilled brunch tomatoes → Saturday fresh pasta sauce → Sunday bagel sandwiches.

Zucchini

Chocolate zucchini bread → Friday grilled zucchini → Saturday vegetable pasta → zucchini bread again as a portable Sunday snack.

The important part: no zucchini in the chili. We have too many better uses for it.

Thursday Chili

Thursday bowl of chili → Friday loaded baked potatoes → finished.

We're not stretching chili across the entire weekend. It gets one encore and then we move on.

Saturday Ingredients

Saturday is intentionally different. Grilled chicken, pasta, vegetables, tomatoes and bread create the pre-race carb-load dinner while keeping every component separate enough that Nate can build a very simple plate.


THURSDAY DINNER

Late-Summer Campfire Chili

Serves: 2 generously, plus enough for Friday's loaded potatoes

Ingredients

  • 1 lb ground beef or ground chuck
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 4 to 5 large ripe tomatoes, chopped
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 1 small can tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • Kosher salt and black pepper
  • Optional Worcestershire sauce, jalapeño or hot sauce

Campfire Method

  1. Set the Dutch oven over a medium bed of coals.
  2. Brown the beef until it develops good color.
  3. Add onion and bell pepper and cook until softened.
  4. Add garlic and cook about 30 seconds.
  5. Stir in the tomato paste, chili powder, cumin, paprika and oregano.
  6. Add chopped fresh tomatoes, beans and beef broth.
  7. Bring to a gentle simmer.
  8. Cook partially covered for about 45 to 60 minutes, stirring occasionally.
  9. Season to taste with salt, pepper and optional Worcestershire or hot sauce.

Important: Before everybody goes back for seconds, set aside about 2 to 3 cups for Friday.


Honey-Butter Campfire Cornbread

Ingredients

  • 1 box cornbread mix
  • Ingredients required on the package
  • 2 tablespoons melted butter
  • 1 tablespoon honey
  • Small pinch of salt

Method

  1. Prepare the cornbread batter according to the package.
  2. Grease the 10-inch cast-iron skillet.
  3. Pour in the batter and cover with the lid.
  4. Cook over moderate coals with a few coals placed on top of the lid.
  5. Rotate the skillet every 8 to 10 minutes for even heat.
  6. Cook until the middle is set and the edges are golden.
  7. Mix melted butter with honey and brush it over the hot cornbread.

FRIDAY LATE BREAKFAST

Bacon, Egg, Cheddar & Fresh Tomato Pie-Iron Melts

This is where the pie irons come out.

Friday morning should feel nothing like Thursday night's chili.

Ingredients for Two

  • 4 thick slices sourdough
  • 4 eggs
  • 6 slices bacon
  • 4 slices sharp cheddar
  • 1 large ripe tomato, thinly sliced
  • Butter
  • Salt and black pepper
  • Optional Dijon mustard or garlic mayo

Method

  1. Cook the bacon in the cast-iron skillet.
  2. Save some bacon grease.
  3. Cook the eggs slightly softer than normal because they will cook again in the pie iron.
  4. Butter the outside of each slice of sourdough.
  5. Layer cheddar, egg, bacon and tomato inside.
  6. Add a small amount of Dijon or garlic mayo if desired.
  7. Close the pie iron and trim any excess bread.
  8. Cook over medium coals, turning frequently, until crisp and deeply golden.

Camp tip: Thin tomato slices work better than thick ones because they add flavor without making the bread soggy.


FRIDAY EARLY DINNER

Loaded Chili Baked Potatoes

This is Thursday's chili getting a completely different job.

Ingredients

  • 2 large russet potatoes
  • 2 to 3 cups leftover chili
  • 1 cup shredded cheddar
  • 4 slices cooked bacon, crumbled
  • Sour cream
  • Fresh chopped tomato
  • Green onions
  • Butter
  • Salt and pepper
  • Optional jalapeños or pickles

Method

  1. Wash the potatoes and wrap each tightly in aluminum foil.
  2. Nestle them beside the hot coals.
  3. Turn every 15 to 20 minutes.
  4. Cook about 45 to 60 minutes, depending on size, until completely soft.
  5. Meanwhile, reheat the chili in the Dutch oven or skillet.
  6. Split each potato.
  7. Add butter, salt and pepper and fluff the inside.
  8. Top with chili, cheddar, bacon, sour cream, tomato and green onions.

Garlic-Parmesan Grilled Zucchini

Ingredients

  • 1 medium zucchini
  • 1 tablespoon olive oil
  • 1 tablespoon melted butter
  • 1 clove garlic, minced
  • 2 tablespoons Parmesan
  • Salt and pepper
  • 1 lemon wedge

Method

  1. Slice zucchini lengthwise into thick planks.
  2. Brush with olive oil and melted butter.
  3. Season with garlic, salt and pepper.
  4. Grill over medium-hot coals for about 3 to 4 minutes per side.
  5. Remove when tender with a little char.
  6. Finish with Parmesan and fresh lemon juice.

FRIDAY DESSERT / WEEKEND SNACK

Chocolate Zucchini Bread

This is one recipe I would make at home before leaving.

It becomes Friday dessert, Saturday brunch bread and Sunday race-day food.

Ingredients

  • 2 cups shredded zucchini
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chips

Method at Home

  1. Heat oven to 350°F.
  2. Combine flour, cocoa, baking soda and salt.
  3. In another bowl combine eggs, oil, sugars and vanilla.
  4. Fold in shredded zucchini.
  5. Add dry ingredients just until combined.
  6. Fold in chocolate chips.
  7. Pour into a greased loaf pan.
  8. Bake about 50 to 60 minutes.
  9. Cool completely before packing.

Friday Campfire Dessert Version

Warm a slice in the pie iron with a little butter.

Optional additions:

  • Nutella
  • Honey
  • Vanilla ice cream

SATURDAY LATE BREAKFAST

Campfire Brunch Board

Saturday morning is intentionally relaxed. Nate needs a good meal, but we don't want to bury everyone under a giant greasy breakfast before the carb-load dinner.

For Four Adults

  • 8 eggs
  • 1 lb bacon or breakfast sausage
  • 4 large tomatoes
  • 8 slices sourdough
  • Fresh fruit
  • Chocolate zucchini bread
  • Butter
  • Cream cheese
  • Jam
  • Honey

Method

  1. Cook bacon or sausage first in cast iron.
  2. Cook scrambled eggs in the same skillet.
  3. Cut tomatoes in half.
  4. Brush tomatoes with olive oil and season with salt and pepper.
  5. Grill cut-side down until slightly charred.
  6. Toast sourdough directly over the grate.
  7. Put everything on the picnic table family-style.

Nate can keep his plate as simple as necessary while everyone else builds what they want.


SATURDAY CARB-LOAD DINNER

This is the one meal we're building specifically around Nate.

The goal isn't culinary experimentation.

The goal is plenty of familiar carbohydrates, grilled chicken, vegetables if wanted, and the ability to keep everything separate.

Grilled Garlic-Herb Chicken

Ingredients

  • 2 to 2 1/2 lbs boneless chicken breasts
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Method

  1. Combine marinade ingredients.
  2. Marinate chicken 2 to 6 hours.
  3. Grill over medium coals.
  4. Turn as needed to prevent burning.
  5. Cook until the thickest portion reaches 165°F.
  6. Rest 5 to 10 minutes.
  7. Slice across the grain and serve separately from the pasta.

Vegetable Penne or Fettuccine

Use whichever pasta Nate and the family prefer. Penne is easier around camp, while fettuccine makes it feel more like a traditional pasta dinner.

Ingredients

  • 1 lb penne or fettuccine
  • 6 to 8 ripe tomatoes, chopped
  • 1 medium onion, diced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • Fresh basil or Italian seasoning
  • 1/2 cup Parmesan
  • Salt and pepper

Method

  1. Boil pasta in the Dutch oven until just tender.
  2. Before draining, reserve about 1 cup of pasta water.
  3. Drain pasta.
  4. Sauté onion, bell pepper and zucchini in olive oil.
  5. Add garlic and cook briefly.
  6. Add fresh tomatoes.
  7. Simmer until tomatoes break down into a rustic sauce.
  8. Add basil or Italian seasoning.
  9. Add pasta back to the pot.
  10. Add small amounts of pasta water until the sauce coats the pasta.
  11. Serve Parmesan on the side.

Important: Keep chicken separate. Keep extra sauce separate. That gives Nate complete control.


Nate's Plain Bucatini Option

If Nate wants an even simpler pre-race meal, this is the backup.

Ingredients

  • 1/2 to 1 lb bucatini
  • Butter or olive oil
  • Mild tomato sauce
  • Parmesan
  • Salt

Method

  1. Boil bucatini until al dente.
  2. Drain.
  3. Toss lightly with olive oil or butter.
  4. Keep tomato sauce on the side.
  5. Keep Parmesan on the side.

A perfectly reasonable race-eve plate is simply:

Bucatini + grilled chicken + garlic bread.


Campfire Garlic Bread

Ingredients

  • 1 Italian loaf
  • 1/2 cup softened butter
  • 3 cloves garlic, minced
  • 1/4 cup Parmesan
  • Fresh parsley
  • Pinch of salt

Method

  1. Slice bread almost completely through, leaving the bottom attached.
  2. Mix butter, garlic, Parmesan, parsley and salt.
  3. Spread garlic butter between the slices.
  4. Wrap loaf loosely in foil.
  5. Heat beside the coals for about 15 to 20 minutes.
  6. Open the foil for the last few minutes if you want crispy edges.

SUNDAY MORNING

Mobile Bacon-Tomato Bagel Sandwiches

Sunday isn't a camp cooking day.

Sunday is an Ironman support day.

These should be assembled Saturday night.

Ingredients

  • 4 bagels
  • 8 slices cooked bacon or ham
  • Cream cheese
  • Fresh tomato slices
  • Sliced cheese
  • Black pepper

Method

  1. Spread cream cheese on each bagel.
  2. Add bacon or ham.
  3. Add tomato and cheese.
  4. Season with black pepper.
  5. Wrap individually in parchment or foil.
  6. Keep cold overnight.

Grab one Sunday morning along with fruit and zucchini bread.


Sunday Ironman Support Cooler

This isn't a recipe. It's survival.

  • PB&J halves
  • Pretzels
  • Bananas
  • Grapes
  • Cheese sticks
  • Trail mix
  • Beef jerky
  • Crackers
  • Chocolate zucchini bread
  • Electrolyte drinks
  • Bottled water
  • Coffee or canned coffee
  • Coke or another caffeine drink for the support crew

Everything should be ready Saturday night so Sunday morning is simply:

Grab cooler. Grab chairs. Go support Nate.


SUNDAY POST-RACE DINNER

Campfire Smashburger Bar

After an Ironman, nobody needs us standing over the Dutch oven for two hours.

We need something hot, fast and celebratory.

Ingredients

  • 2 lbs 80/20 ground beef
  • 4 to 6 brioche buns
  • American or cheddar cheese
  • Onion
  • Fresh tomatoes
  • Dill pickles
  • Lettuce
  • Cooked bacon
  • Burger sauce
  • Butter
  • Salt and black pepper

Method

  1. Divide beef into loose 3 to 4 ounce balls. Do not pack tightly.
  2. Heat the cast-iron skillet until very hot.
  3. Place a beef ball on the skillet.
  4. Smash firmly into a thin patty.
  5. Season with salt and pepper.
  6. Cook until the edges are dark brown and crisp.
  7. Flip once.
  8. Add cheese.
  9. Butter and toast buns in the same skillet.
  10. Set all toppings out and let everyone build their own burger.

If we have the energy, we can make potatoes.

If we don't?

Open a bag of chips.

After supporting an Ironman all day, nobody gets points for making dinner harder than it needs to be.


The Equipment Plan

  • Dutch oven: chili, pasta, sauce and reheating
  • 10-inch cast-iron skillet: bacon, eggs, vegetables and smashburgers
  • Double pie iron: Friday breakfast melts and warmed zucchini bread
  • Campfire grate: chicken, zucchini, tomatoes and bread
  • Foil + coals: baked potatoes and garlic bread

The Real Goal

This isn't about eating leftovers for four days.

It's about making ingredients work harder.

A tomato doesn't have to belong to one recipe.

A zucchini doesn't need to be hidden inside Thursday's chili just because we have a pile of zucchini at home.

And Thursday night's dinner doesn't need to dictate the rest of the weekend.

Each meal should feel new.

But when we pack up Sunday night, the cooler should tell the story:

We used what we brought.

That's the sweet spot we're chasing with these cascading campfire menus.

Comfort food Thursday.

Pie-iron breakfast Friday.

Loaded potatoes Friday night.

A relaxed Saturday brunch.

A serious pre-Ironman pasta dinner.

Mobile support food Sunday.

And smashburgers waiting at the finish line.

That's a camping menu worth looking forward to.
