Smoky Chipotle Chocolate Chili Recipe (Stovetop or Crockpot)
Smoky Chipotle Chocolate Chili Recipe (Stovetop or Crockpot)
If the phrase chocolate in chili sounds like either brilliance or a minor cooking crime, this recipe is here to settle the matter.
This is not dessert chili. This is not sweet. This is not one of those recipes that sounds clever but tastes confused.
This is a rich, smoky, slow-building bowl of chili with chipotle heat, deep beefy flavor, and just enough dark chocolate to make the whole thing taste fuller, darker, and more interesting without waving a candy bar around in your face.
In other words: the weird part works.

Stovetop Version
- Heat olive oil in a large pot over medium heat.
- Add onion and cook 4 to 5 minutes.
- Add garlic and cook 30 seconds.
- Add meat and cook until browned. If using stew meat, brown it well first. If using both meats, brown stew meat first, then ground beef.

- Add crushed tomatoes, diced tomatoes, beans, and beef broth. Stir well.

- Serve hot.
Crockpot Version
- Heat olive oil in a skillet over medium heat.
- Cook onion 4 to 5 minutes. Add garlic and cook 30 seconds.
- Brown the meat. If using stew meat, brown it first. If using both meats, brown stew meat first, then ground beef.
- Stir in chipotle peppers, adobo sauce, chili powder, cumin, smoked paprika, oregano, cinnamon, salt, black pepper, and espresso powder. Cook 1 minute.
- Transfer everything to the crockpot.
- Add crushed tomatoes, diced tomatoes, beans, and beef broth. Stir.
- Cook on LOW 6 to 8 hours or HIGH 4 to 5 hours.
- In the last 20 to 30 minutes, stir in chopped dark chocolate.
- Before serving, add vinegar or lime juice. Add brown sugar if needed. Taste and adjust salt.
Best result: add the chocolate late. Early can muddy the flavor. Late gives the chili that deep, rounded finish that makes people stop and say, “Okay, what is that?”
Serving Notes
This chili is especially good topped with sharp cheddar, a spoonful of sour cream, sliced jalapeños, and cilantro if you remembered to buy it like a responsible adult.
It also gets better after it sits a bit, which is good news if you like leftovers and bad news if you were hoping for restraint.
Why This Recipe Works
The chipotle brings smoke and heat. The espresso deepens the base without making the chili taste like coffee. The dark chocolate does not make it sweet; it smooths the rough edges and gives the whole pot a darker, fuller finish.
The result is chili that tastes like it knows exactly what it’s doing, even if you had serious doubts somewhere around the moment you were holding chocolate over a pot of beef.
